THE RESTAURANT
The restaurant was founded in 2015.
Inspired by a serendipitous encounter with Rogelio, a young Mexican vegan who owns a self-sufficient ranch in the Sierra Mountains of Baja California, our cuisine is fair-trade and Mexican-inspired, primarily plant-based, featuring organic, local, and seasonal ingredients.
Our menu changes with the seasons and varies depending on the offerings from the producers we work with.

Santa Rosalia is committed to using organic*, local, and seasonal ingredients every day, prioritizing plant-based options, minimizing waste, offering a limited menu that’s accessible to everyone, sorting recyclable waste, composting organic waste, and using biodegradable packaging.
*98% organic products, with the exception of a few spices and herbs.

Sustainable tourism
Organic and local products, recycled waste, organic waste 100% composted by Les Alchimistes in Toulon. No air conditioning or outdoor heating in winter.
