So, in 2008, he and his wife Brigitte moved to La Seyne-sur-Mer, in the Baie du Lazaret, to run their own aquaculture farm, one of those wooden houses built on stilts that have been delighting the eyes and palates of Var residents for decades. Today, the couple oversee two farms: the first is still devoted to fish (bass, sea bream and maigres), while the second is home to Mediterranean oysters and, above all, the great local specialty: the Tamaris mussel.

From 31/12 to 30/12, daily. Sales area: Monday, Tuesday, Wednesday, Thursday, Friday from 8.30am to 12.30pm and from 2.30pm to 5pm.
Saturday, Sunday: 10am to 12:30pm.
Summer (until the end of September) 7pm to 10pm tasting on Friday and Saturday evenings and Sundays from 12pm.
